High in the Black Mountains near Félines-Minervois, our organic Mediterranean vineyards produce wines that are as elegant as they are authentic. We take a hands-on, thoughtful approach to winemaking, allowing nature to guide us while using modern techniques to protect the quality of our fruit. Every step of the process is designed with care: small trays prevent grapes from being crushed, a gentle elevator moves the fruit without bruising, and our precise destemmer works slowly to avoid over-extraction.
We embrace low-intervention, artisanal methods but never compromise on quality. Our goal is to create wines that feel genuine, modern, and full of character—for those who appreciate craftsmanship and a bit of adventure in their glass.
Growing
Our 10 vineyard plots span 5 hectares of diverse soils—from schist and limestone to sandstone— at altitudes reaching 450 metres. This elevation brings a natural freshness to our wines, as the cooler temperatures and later ripening periods enhance the complexity and balance of the fruit.
We prune using a mix of traditional techniques, including Guyot, Cordon de Royat, and Gobelet, carefully tailoring each method to the needs of specific plots. Our vines, some as old as 70 years, deliver naturally low yields, which concentrate structure, flavor, and intensity in the grapes.
We farm organically, employing light machinery and hand-picking to preserve the integrity of both the vines and the soil. Weeds are often managed manually, and each plot receives individual attention to maximize its potential. The result? Healthy, vibrant vineyards that yield grapes full of character, depth, and elegance.
Our approach to winemaking is about allowing the fruit to shine. We focus on gentle extraction, ensuring tannins remain supple and refined without becoming overpowering. When we do extract, it’s done with precision to maintain a soft, balanced texture.
We follow a philosophy much like good cooking: start with the best raw ingredients and do as little as possible to them. The grapes arrive from the vineyard in small 15kg trays to prevent damage, and we haul them by hand into a destemmer set to its slowest speed, preserving the fruit’s integrity. From there, fermentation takes place in temperature-controlled tanks, giving us the ability to fine-tune the process and highlight each plot’s unique character.
A key part of our process is making clean wines. We are meticulous about avoiding off-flavors, such as funky or brett notes. While we embrace low-intervention methods, we never compromise on cleanliness and precision. Our wines are a balance of minimal processing and pure, vibrant fruit—crafted for those who value both authenticity and quality.
